Title: Celeriac and Radicchio Salad

3 T olive oil
1 1/2 T balsamic vinegar
0 - salt and pepper to taste
2 - medium or 1 large celeriac, peeled and cut in thin strips
1/3 C walnut pieces
1 - medium head radicchio, cored with leaves separated

In a large salad bowl, whisk together the oil, vinegar, salt, and pepper until thoroughly blended. Add the celeriac and walnuts and toss well to combine. Divide the radicchio leaves equally among four serving plates. Top with equal portions of the celeriac mixture and serve at once.

  1. I dig this stuff. You can just scoop up the celeriac with the radicchio into yummy bite-sized pieces.
