Title: Company Rice

3 C water
3/4 C brown basmati rice
1/2 C dried lentils
1/4 C barley flakes or pearl barley
1/4 C cashews
1/4 C pine nuts
1/4 C whole almonds
1 T canola oil
2 bay leaves
1 1/2 t salt
1 - clove garlic, minced
1/4 t whole cumin seeds
1/4 t ground cinnamon
0 - ground black pepper

Combine all the ingredients in a 3-quart saucepan. Cover and bring to a boil over high heat. Turn the heat down to low and cook for 35-45 minutes, or until the rice and barley are tender. fluff the mixture with a fork and serve.

  1. Very nutty, and very easy. I have the sense that this scheme--popping everything in the rice cooker--could work even better, so I should experiment with this.
