Banana Nut Waffles


1 3/4 C vegan milk
1/4 C water
2 t apple cider vinegar
2 - medium bananas
3 T canola oil
3 T maple syrup or agave syrup
1 t vanilla extract
2 1/4 C all-purpose flour
1 t baking powder
1 t baking soda
1/2 t salt
1/4 t ground nutmeg
1 C walnuts, chopped finely

Preheat waffle iron. Pour the vegan milk, water, and vinegar into a measuring cup and set aside to curdle.

mash the bananas very well in a large mixing bowl. Add the vegan milk mixture, oil, syrup, and vanilla, and stir.

Add the flour, baking powder, baking soda, salt, and nutmeg. use a fork to combine. Don't overmix, just mix until there are minimal lumps left. Fold in the chopped walnuts.

Spray the cooking surfaces of yoru waffle iron with nonstick cooking spray and cook the waffles according to the manufacturer's directions.

  1. As with most Veganomicon recipes, it's a fairly complex recipe. It tastes fine, but sticks like crazy to the waffle iron, even when you've sprayed it with olive oil. Not worth the trouble.
