Title: Sicilian Olive Salad

2 1/2 C pitted large green olives
3 - stalks celery, thinly sliced
1 - medium carrot, thinly sliced
1 - small red onion, thinly sliced
1 - large garlic clove, finely chopped
1/2 C caperberries
1 t dried oregano
1/2 t ground black pepper
1/2 C olive oil

In a medium bowl, toss all ingredients until well combined. Cover and marinate in the refrigerator 1 to 3 days, stirring occasionally. Return to room temperature before serving.
