Title: Fattoush (Lebanese Bread Salad)

2 - cloves garlic, mashed into a paste
2 t tahini
1/3 C lemon juice
1/3 C olive oil
1/2 t salt
0 - cayenne to taste
2 - whole wheat pita breads
1 - large cucumber, peeled, seeded, and chopped
1 - large tomato, seeded and chopped
1/2 - small green bell pepper, seeded and chopped
1/2 C red onion, minced
1 C cooked chickpeas
1/3 C fresh parsley, chopped
1/3 C fresh mint, chopped
2 C shredded romaine lettuce

Preheat the oven to 350° F. In a small bowl, whisk together the garlic, tahini, lemon juice, olive oil, salt, and cayenne until blended. Set aside.

Place the pitas on a baking sheet and bake until lightly toasted, turning once, 10-12 minutes. Remove from the oven, cut or tear into bite-size pieces, and place in a large bowl. Add the cucumber, tomato, bell pepper, onion, chickpeas, parsley, mint, and as much of the dressing as needed to coat. Toss well to combine, then let sit for 10-15 minutes to let the flavors develop.

Serve over lettuce.

  1. Yum! You have to cram the pita triangles all the way to the bottom of the bowl and let them get all mushy for it to taste its best.
