Title: Cranberry Orange Nut Bread

1/2 C vegan milk
1/4 C orange juice
1/4 C canola oil
1 C sugar
1 t vanilla extract
2 C all purpose flour
1 1/4 t baking powder
1/2 t baking soda
1/2 t salt
1/4 t ground allspice
1 T grated orange zest
1 C chopped fresh cranberries
1/2 C chopped walnuts

Preheat the oven to 325° F. Lightly grease a 9x5 inch loaf pan.

In a large mixing bowl, mix together the vegan milk, orange juice, canola oil, sugar, and vanilla.

Sift in the flour, baking powder, baking soda, salt, and allspice. Mix until just smooth. Fold in the orange zest, cranberries, and walnuts. Spoon into loaf pan.

Bake for about 1 hour. Let the bread cool in the pan for about 15 minutes and then cool on rack.

  1. Jon pronounces this the best baked good to ever emerge from our kitchen. Tremendously tasty. I am told that it is better with cream cheese . . . grrrr.
