Title: Corn Bread

2 C vegan milk
2 t apple cider vinegar
2 C cornmeal
1 C all purpose flour
1/4 C sugar
2 t baking powder
1/2 t salt
1/3 C oil

Preheat the oven to 350° F.

Combine the vegan milk and vinegar in a measuring cup and set aside to curdle.

In a large mixing bowl, sift together the cornmeal, flour, sugar, baking powder, and salt. Create a well in the center and add the vegan milk mixture and the oil. Use a wooden spoon to mix together until just combined.

Pour the batter into a 9x13 inch baking pan. Bake for 30-32 minutes, until a toothpick or butter knife comes out clean.
