Title: Chestnut Cake

2 C chestnut flour
1/4 C sugar
0 - salt
1 C water
3 T olive oil
3 T golden raisins, soaked in warm water for 10 minutes
1-2 T pine nuts
0 - confectioners' sugar

Preheat the oven to 350° F. Lightly grease a 9-inch springform pan and set aside.

In a large bowl, mix together the chestnut flour, sugar, salt, and water until thoroughly combined. Add the oil, one tablespoon at a time, mixing well after each addition.

Dry the drained raisins between paper towels and add to the chestnut batter, mixing well to combine. Transfer batter to prepared pan. Sprinkle the pine nuts over the top.

Bake 30 minutes or until a wooden pick inserted in the center comes out clean. Let cool completely in the pan. Remove the sides of the springform pan and sprinkle with confectioners' sugar.
