Title: Baby Bok Choy with Shiitakes
3 T hoisin sauce
1 T soy sauce
1 T sake
1 T water
1 T peanut oil
2 - dried chiles
1 t fresh ginger, minced
1 t garlic, minced
4 - small baby bok choy, trimmed and halved lengthwise
4 oz. shiitake mushrooms, stems removed and caps thinly sliced
2 T scallions, thinly sliced
In a small bowl, combine the hoisin, soy sauce, sake, and water and set aside.
Heat the peanut oil in a large skillet over medium-high heat. When the oil is hot, add the chiles and stir-fry for about 30 seconds. Discard the chiles. Add the ginger and garlic and stir-fry about 30 seconds. Add the bok choy, mushrooms, scallions, and sauce and stir-fry to coat the vegetables, 2-3 minutes.
Reduce the heat to low, cover and simmer until the vegetables are tender, about 15 minutes.
