Maple Banana Loaf
1 3/4 C whole wheat pastry flour
2 t baking powder
1/2 t baking soda
1 t cinnamon
1/2 t fresh nutmeg, grated
1/2 t salt
1 C very ripe banana, mashed
1/2 C maple syrup
1/2 C vegan milk
1 t vanilla extract
1 T canola oil
Preheat oven to 350° F. In a large bowl, combine dry ingredients. In a separate bowl, combine mashed banana with maple syrup, vegan milk, and vanilla extract. Mix well and add to dry mixture. Stir through and add canola oil until the mixture starts to come together. Mix until just combined (do not overmix).
Pour into a lightly oiled loaf 9x5 loaf pan and bake for 45-50 minutes, until golden brown and a toothpick comes out clean.

When there are other banana bread options in the world, there is never a need to make or eat this. It's not bad, just boring, and frankly, any banana bread that doesn't have walnuts makes for a waste of chewing.
