CE's special tabbouleh


1 1/2 C bulgur
2 - bunches parsley, chopped finely
1/2 - bunch mint, chopped finely
1 - medium cucumber, diced
2 - medium carrots, grated
3 - stalks celery, diced
1 - medium green bell pepper, diced
2 - lemons, juice of
1/3 C olive oil
1 t salt
1/4 t ground black pepper
0 - radish sprouts, if desired

Cover the bulgur with boiling water and leave to soak for 15 minutes.

Cut everything up and throw it together. Chill.

  1. I could eat this stuff all day. Needs a little more olive oil.
