5 - medium potatoes (about 2 pounds)
1/2 C olive oil
1/3 C lemon juice
1 t caraway seeds
1 t salt
1/2 t ground cumin
1/8 t cayenne
1 - small green pepper, cut in thin strips
Boil potatoes until tender, about 25-30 minutes.
Drain potatoes; let cool, and cut into half-inch cubes. Add strips of green pepper.
Combine oil, lemon juice, caraway seeds, salt, cumin, and cayenne. pour over potatoes and peppers. Toss lightly.

Just incredibly tasty. Good to begin with, and better the longer it sits in the fridge.
