Quinoa Pudding

1 C quinoa
2 C water
3 C apple juice
1/2 C dried dates
1 C dried apples, chopped

Add rinsed quinoa to water and simmer for about 20 minutes, until water is absorbed.

Add apple juice, dried fruits, and cinnamon, if you desire. Simmer and stir for about ten minutes. Chill in refrigerator.
