Quinoa with Pistachios and Cranberries
1 C quinoa
1/2 C pistachios
1 - vegetable bouillon cube
1 1/2 C boiling water
1/2 t salt
1 - cinnamon stick
1 - bay leaf
1/2 C dried cranberries
Soak the quinoa in cold water for 30-60 minutes. Rinse thoroughly and drain.
Toast the quinoa over medium heat, add cranberries and pistachios.
Add boiling water, bouillon cube, bay leaf, and cinnamon stick. Simmer for 20 minutes.
