Sweet Potatoes with Moroccan Spices

1/2 lb. sweet potatoes, peeled and sliced
1/4 C Italian dressing
1 T maple syrup
1 1/2 t grated lemon rind
1 1/2 t coriander seeds
1 1/2 t cumin seeds
1 1/2 t mustard seeds
0 - salt and pepper

Preheat oven to 375ºF. Place sweet potato slices in a baking pan.

Mix together dressing, syrup, lemon peel, and spices. Spread over sweet potatoes. Roast until tender, about 30-45 minutes.
