Indian Grits
2 T olive oil
1 t mustard seed
1/2 t crushed red pepper
2 - cloves garlic
1/2 C cashews
1/2 C frozen green peas
6 T grits
2 C water
Saute mustard seed, garlic, cashews, and crushed red pepper in oil. Add peas and heat through.
Add water and bring to a boil. Stir in grits, and let simmer for 15-20 minutes.
Squeeze a little lemon or lime juice on top if desired.
