3 - cloves garlic, minced
6 C vegetable stock
1/4 C tomato paste
3 C cooked black-eyed peas
2 t dried oregano
1 - bay leaf
1/2 t salt
1/4 t crushed red pepper
4 oz. kale, chopped
1 lb. sweet potatoes, peeled and chopped

Saute the garlic in a little olive oil in a large soup pot.

Add broth, tomato paste, black-eyed peas, oregano, bay leaf, salt, red pepper, greens, and sweet potatoes. Simer for about 30 minutes, until sweet potatoes are soft.

Remember to remove the bay leaf!
