Bell Peppers Stuffed with Couscous


6 - whole bell peppers
1/2 C couscous
2 - diced bell peppers, red or yellow
1 - zucchini, diced
2 T lemon juice
2 T olive oil
1/4 C chopped fresh parsley
0 - salt and pepper

Add couscous to boiling water and cook for 20 minutes. Hollow out the bell peppers.

Mix diced bell peppers, zucchini, and couscous.

Whisk together lemon juice, olive oil, and parsley and pour over peppers, zucchini, and couscous.

Spoon couscous into bell peppers. if desired, cook in oven until bell peppers are soft.
