Sun Dried Tomato Pesto
2 C fresh basil
8 - sun-dried tomatoes, rehydrated
3 - cloves garlic, minced
1/4 t salt
1/4 C olive oil
1/4 C pine nuts, toasted.
With a blender or food processor, blend the basil, tomatoes, garlic, salt, oil, and 1/2 of the pine nuts until corasely mixed. Stir in remaining pine nuts.

Good, and very easy. The consistency was spreadable. If it's to be used as a pasta sauce, there should be more olive oil in it.
