Orange Couscous Pilaf

2 C vegetable stock
1 C couscous
1 C carrots, grated
2 - oranges, peeled and cut in chunks
4 t grated orange peel
2 T dried cranberries
1/4 t salt
1/4 t ground cinnamon

Add the couscous to boiling vegetable stock. Add the carrots, oranges, orange peel, dried cranberries, salt, and cinnamon. Boil again for a few minutes, then turn off heat, cover and let stand.

  1. Tasty. For this to really work, you need very sweet oranges.
