1 lb. margarine
4 T onion, finely chopped
1 1/2 T garlic, finely chopped
2 t fresh ginger, minced
1/2 t turmeric
4 - green cardamom pods, crushed
1 - stick cinnamon
3 - whole cloves
1/8 t ground nutmeg
Slowly melt the margarine over low heat. Add the spices and let simmer at low heat for 20-30 minutes. Do not let it brown. Strain through cheesecloth and store in refrigerator.
Use as base to saute vegetables, especially collard greens.

This stuff is great. You can make a bunch ahead of time and have it on hand in the fridge whenever you want. Made with margarine, it hardly knows how to spoil.
