Country Potato Pancakes

3 - large potatoes, boiled until soft
2 T onion, finely chopped
2 T celery, finely chopped
2 T green bell pepper, finely chopped
2 T whole wheat flour
1 T fresh parsley, minced

Shred the poatoes in a food processor or with a grater. Combine with the remaining ingredients and shape into four patties.

Cook on a nonstick griddle until browned on both sides, about 10 minutes.
